Steph’s Cauli Egg Protein “Oatmeal”
This may sound a little strange, but don’t you dare knock it until you try it!! Not only is this meal Macro friendly for all my FASTer Way Clients (perfect for Regular Macro day when you add all the yummy fruit), but its also nutrient rich, inexpensive and quick to make, full of protein and fiber, makes a huge bowl and tastes absolutely delicious…yes even with cauliflower!!!
Ingredients:
2 cups frozen cauliflower rice
1 whole egg
12 T egg whites
avocado oil or olive oil spray
sweet leaf (or brand of choice) stevia
cinnamon
1 cup berries of choice
1/4 sliced banana
1 1/2 tsp almond butter
Macros:
Calories-347 Fat - 9.8 g Carbs -30 g
Protein - 33 g
Directions:
Coat two pans with spray. Put cauli rice in one pan. Cover with 1/2 c water, a GENEROUS sprinkling of stevia and cinnamon and allow to cook. In other pan cook mixed egg and egg whites. When cooked place both ingredients in bowl and top with berries, banana and almond butter. ENJOY!!!!
*If you are wanting to add some extra complex carbs, mix in 1/2 C precooked gluten free oatmeal!
